Damien Williams -Owner / Head chef – Spits N Pieces


Damien is a qualified head chef with a passion for food and possesses more than 20 years professional experience in the hospitality industry. During this time he has earned for himself an impressive reputation for delivering a wide repertoire of culinary excellence ranging from basic BBQ to more modern ‘plate up meals’ and functions that can cater from the smallest to the largest number of guests.


Having gained  invaluable experience as a contractor chef, Damien decided to found his own business in 1990 along with his wife Nikki who brings her ‘front of house’ experience to the success that is Spits N Pieces today.


As a well established and highly regarded mobile catering company situated on the Gold Coast, Spits N Pieces were one of the first caterers on the scene to deliver quality Spit Roast to private residences or special venues ranging from, Councils, Government organisations, Small Business, sporting Groups, Large manufacturing Industries, Business franchises, Schools & Social clubs.


Employing only qualified chefs and experienced wait staff, Spits N Pieces offers the finest of culinary menus that reflect the values and quality service that this professional catering service holds so highly in this day and age. Our qualified chefs are professionally presented in full uniform and our wait staff are dressed in black ready to impress your guests.


Spits N Pieces can also cater for special events such as weddings, Birthday celebrations, Gold & Silver anniversaries, Sporting events, Retirements, Melbourne cup day, New years eve & Chinese New year celebrations, Christenings & Wakes.


We can cater for your budget with the assurance that we will not compromise on the quality or freshness of the food we prepare and deliver. We always seek to source our produce locally where possible.

Chose from melt in the mouth roasts of Beef, Pork with crackling, Chicken or seafood. Also available are our legendary BBQ Bonanza’s, from the simplest of choices to the gourmet style BBQ, we promise to satisfy the appetites of al your guests.




Q. What time do you arrive?

A. Approximately 1 hour prior to food service for all normal buffet menu set up’s


Q. How much space do you require?

A. enough room for 2 trestle tables 2.4m in length ( depending on numbers )


Q. do you require a kitchen?

A. No, all meats are cooked in Combi Steam oven’s and transported in hot boxes ready for our chefs to carve in front of your guests. All salads are freshly tossed on site.


Q. What do you bring?

A. We supply Crockery plates, Stainless Steel Cutlery, tables for buffet and carving, coverings, serviettes, bread rolls, gravy & condiments and we remove all rubbish at the end of service.

( only with buffet menu’s )


Q. How long will it take you?

A. Most functions we allow for a 2.5 hour service from arrival to pack down, depending on numbers.
